1/2 cup butter, 1/2 cup brown sugar, 1/4 cup jaggery powder, 1 tbsp warm milk, 2 cups refined flour, 1 tsp baking powder, and 1/2 tsp baking soda
1/2 teaspoon ginger powder, 1/4 teaspoon cinnamon powder, 1 teaspoon cardamom powder, 1 teaspoon clove powder, and 1 teaspoon salt
In a pan, melt the butter. It's best if the butter is soft or at room temperature. Mix in the brown sugar and jaggery powder with the butter.
Combine the refined flour, baking powder, baking soda, vanilla extract, ginger powder, cinnamon powder, cardamom powder, clove powder, and salt in a large mixing bowl. Combine all of the ingredients.
Now, in batches, add the milk and knead gently to produce a dough. Make sure you don't use too much milk or the dough will become soggy. Refrigerate the kneaded dough for 15 minutes.
Place the dough on a piece of parchment paper and top it with another piece of parchment paper. Roll it out using a rolling pin. Cut cookies into desired shapes and sizes with a cookie cutter or knife.
Place the cookies on a parchment paper-lined baking sheet. Bake the cookies for 8-10 minutes at 180 degrees Celsius.
Serve and enjoy the cookies once they're done. You can also use frosting to decorate the cookies in a traditional fashion.
